Researchers from the ITMO University are working on creating biological additives in food products based on chitin, which is extracted from the shells of locusts, according to “Izvestia”.
It is noted that this addition will become a substitute of traditional fillers from waste of the meat industry, which are included in the composition of sausages and semi-finished products to increase nutritional value. “Animal protein is becoming a luxury for mankind, in this connection sharply there is a question about how to create a cheaper product with the same nutritional value as meat,” said Professor of the faculty of food and biotechnology engineering Alexander Echevsky.
The expert added that the breeding of locusts is required less expenses than breeding cows. In terms of its nutritional value of locusts in many respects superior to beef. In addition, products with such additives will be useful for those who suffer from atherosclerosis and hypertension, the newspaper writes.
In April was published the results of a survey of consulting company Deloitte, according to which Russians are not satisfied with the quality of sausage products, meat products, fish, seafood and convenience foods.
In January Deputy Prime Minister Alexey Gordeev instructed the competent departments to work together with the scientific community to compile a list of foods that you should be required to be enriched with vitamins and microelements. In particular, it is planned to make it compulsory salt iodization, and enrichment of milk with vitamins A and D.
